Blueberry Pesto Grilled Cheese

One of the most comforting meals in my adult life is a grilled cheese. Not just your run-of-the-mill American cheese on white bread grilled cheeses. I'm talking a creamy, gooey, flavorful grilled cheese on fresh sourdough. A little sweet, a little salty, and of course with a few green things thrown in there.
I LOOOOOOVE goat cheese and I think a perfect pairing to that is some sort of fruit. You could probable use cranberries or strawberries and get a similar result. No matter what you use, this grilled cheese has such a myriad of flavors that you'll enjoy it until the last bite!
If you're vegan or dairy-free, a great alternative would be Violife or Follow Your Heart mozzarella slices. Additionally, you can make your own pesto or Trader Joes has a wonderful vegan pesto option. I would love to hear everyone's spin on this and let me know what you think! Enjoy!
Blueberry Pesto Grilled Cheese

Ingredients
4 slices of sourdough
1/2 C mozzarella
2 oz goat cheese
1/2 C pesto
1/4 C blueberry jam
1 C spinach
1/4 C mayonnaise
Instructions
Spread 2 slices of bread with 1 tbsp mayo each and place that side down in a skillet over medium heat.
Spread each slice of bread with pesto.
Top with mozzarella, goat cheese and spinach.
Spread remaining two slices of bread with blueberry jam and place on top of the sandwich.
Spread remaining mayo on the tops of each sandwich.
Cook for 3-4 minutes on each side, until golden brown and cheese is melted.
