Blueberry, Quinoa and Goat Cheese Salad with Maple Balsamic Vinaigrette

Winter may be coming but I don't think it's too late to enjoy a hearty bowl of greens. I think the biggest thing I hear from people in regards to eating healthy is that they don't like salad, but then I ask them to describe their salad to me and I wouldn't like it either. I'm not one to promote the sad romaine-with-some-ham-and-a-tomato salad. That's not a salad.

To me a salad has a variety of components that keep every bite full of flavor, and this salad is a perfectly balanced meal, with protein, carbs, fat and filled to the brim with veggies. It will satisfy your palate and keep you full! Don't be afraid to toss in whatever sounds good to you when you're putting together a salad. Adding a source of fat and protein with help to keep you full throughout the day and having some sort of complex carb in there will give you sustained energy. Think about textures and colors, sweet and spicy--literally anything!

Blueberry, Quinoa and Goat Cheese Salad with Maple Balsamic Vinaigrette

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

  • 4-6 cups spring mix

  • 1 lb chicken breast

  • 1 cup quinoa

  • 1 cup blueberries

  • 4 oz goat cheese

  • 2 oz slivered almonds

  • 1 avocado, sliced


  • 1/2 cup olive oil

  • 1 1/2 tbsp maple syrup

  • 2 tbsp balsamic vinegar

  • 1 tbsp lemon juice (about 1/2 lemon, juiced)

  • 1 tsp garlic

  • 1/2 shallot, diced

  • Salt and pepper, to taste


  1. Prepare the quinoa, according to package.

  2. Cook the chicken breast in a pan over medium heat, about 7-8 minutes on each side. Season to taste.

  3. Add all of the dressing ingredients to a bowl and whisk together.

  4. Assemble the salads.

  5. Enjoy!
